Rockwell Hardness for Kitchen Knives
HRC is a hardness measurement, not a standalone quality score.
The practical answer
Higher hardness can support edge retention and thinner edges, but may change toughness and sharpening behavior. Geometry and heat treatment still matter.
What matters most
The current Matsato Osuren page publishes 54–56 HRC; interpret that figure alongside its steel and geometry rather than in isolation.
