How to interpret those numbers

A 20 cm blade sits near the familiar 8-inch chef-knife format, making it a general-purpose size rather than a specialist blade. The merchant lists 54–56 HRC. Hardness alone does not determine cutting performance: edge geometry, heat treatment, grind, steel composition and sharpening all matter.
